The elongated dark green leaves of sorrel resemble those of the spinach but are more oval or spear-shaped.
They have a pronounced sharp, lemony taste.
Slice leaves into thin strips and use sparingly in combination with milder salad greens or other wild herbs or the taste can be overpowering.
Use in white fish or salmond salads.
