Also known as Belgian endive or chicory, this is a bullet-shaped head of smooth, compact, white to pale yellow leaves.

The pale tones are the result of the plant not being exposed to sunlight during its growth.

Crisp and succulent, witlof leaves have a bitter taste that works well in egg salads or ones that contain citrus fruits or celery.
