Broccoli is a prime source of calcium, vitamins A & C, anti-oxidant beta carotene, folate which helps reduce the risk of cancer and heart disease, insoluble fibre and potassium.
While that’s a good start, broccoli’s super status is based on the properties of its many other phyto-chemicals.
Among these are dithiolethiones which are anti-cancer agents; indoles which help to combat hormone related cancers; isothiocyanates which stimulate cancer fighting enzymes and also neutralise cancer causing substances such as smoke; lutein which fights colon cancer and eye diseases; and sulphorphane which reduces tumour formation and stimulates cancer fighting enzymes.
