Instructions
Bring a large pot of water to a rolling boil.
Add the broccoli and boil for 7 minutes or until tender.
Drain and return to the pot, reserving one or two florets for garnish.
Add the sour cream and coriander seeds.
Puree with a stick blender until smooth, drizzling in the oil to achieve your desired consistency.
Let sit for 5 minutes, then blend again for 1 minute.
Reheat gently if needed, season to taste, garnish with reserved florets and coriander leaves and serve warm.
