Chilled Fresh Tomato Soup
This uncooked soup is great on a hot summer lunch.

Fresh Tomatoes
peeled and roughly chopped

Garlic

Cold Pressed Olive Oil
Extra Virgin

Vinegar - Balsamic
Salt and Pepper to taste
Yoghurt
for garnish
Instructions
Place the tomatoes, garlic and oil in a food processor and blend until smooth.
Place the mixture through a sieve to remove the seeds.
Stir in the balsamic vinegar and salt and pepper to taste.
Leave in the fridge to chill before serving.
