180gramsQuinoa (White or Red)
375mlWater
1largeCucumberTelegraph - diced
4Spring Onionssliced
2longRed Chilliesdeseeded and sliced
Limerind
125gramsFresh Coriander leaveschopped

Dressing
1cloveGarlicfinely grated
5gramsRaw Sugar
15mlFish Sauce
15mlLime Juice
15mlCold Pressed Olive OilExtra Virgin
Instructions
Place quinoa in a small saucepan with the water and lime rind, bring to the boil, then reduce the heat, cover and simmer for 10 minutes until all the water is absorted.
Remove from the heat and cool completely, remove and discard the lime rind.
Combine the quinoa in a bowl with the cucumber, spring onions, chillies and coriander leaves.
Mix all the dressing ingredients together.
Pour over the salad, toss well and just before serving, add mango and garnish with extra coriander leaves.
