Instructions
Heat a large frypan over medium heat.
Add rice, toast, stirring frequently, until lightly browned, about 3 minutes.
Add curry powder and cook for another 1 minute.
Add kale, pumpkin, raisins, coconut milk, water and salt.
Cover and simmer until the liquid is absorbed and the rice and pumpkin are tender, about 12 minutes.
Remove from the heat and leave to stand, covered for about 5 minutes.
serve while warm.
