Bay leaf
Instructions
Pour boiling water over the shallots and leave to stand for 1 minute.
Drain and cut off the root and top section of the shallots, then lift off the skins
Combine the tomato paste, red wine vinegar oil, sugar and salt in a microwave-proof dish large enough to hold the shallots in one layer.
Add the water, sultanas and bay leave and then the shallots.
Cover and microwave on high for 6 minutes or until the onions are tender.
Serve immediately or leave to stand and serve at room temperature.
