This is a cross between a cooked dish and a salad. Great for a chilly day.Add cubes of Feta cheese, hard-boiled eggs or other protein of your choice to make it into a Main course.

Ingredients
450gramsCabbage - RedFinely shredded
1mediumOnions - BrownThinly sliced
30mlCold-pressed Olive OilExtra Virgin
30mlVinegar - Red Wine
225gramsTomatoes - CherryHalved
60gramsChivesSnipped into 30 cm lenghts
Salt and Pepper to taste
Instructions
Heat the oil in a large saucepan and put in the onion and cabbage.
Cook and cover gently for about 10 minutes, or until the cabbage is tender, stirring from time to time.
Once tender, add the vinegar.
This stage can be done in advance.
When ready to serve, gently reheat the cabbage (if prepare before hand)
