Ingredients

Yams
halved lengthwise

Sugar - Raw

Cold Pressed Olive Oil
Extra Virgin

Lime
rind (5 g) and juice (30 ml)
Freshly ground Black Peeper to taste

Fresh Mint or Parsley
finely chopped
Instructions
Place the yams, sugar, oil, rind, juice and pepper into a microwave-proof dish.
Mix, cover and cook on high for 4 - 6 minutes or until tender.
Stir once during cooking.
Mix the herbs through the yams.
Enjoy.
