SWEET AND SOUR SHALLOTS

Sweet and Sour Shallots (baby onions)

A great side dish with any salad.

Equipment

  • Microwave-proof dish.

Ingredients

  • 500 grams Shallots
  • 30 ml Tomato Paste
  • 30 ml Vinegar - Red Wine
  • 15 ml Cold Pressed Olive Oil Extra Virgin
  • 15 grams Sugar - Raw
  • 5 grams Salt
  • 250 ml Water
  • 70 grams Sultanas
  • 1 Bay leaf

Instructions

  • Pour boiling water over the shallots and leave to stand for 1 minute.
  • Drain and cut off the root and top section of the shallots, then lift off the skins
  • Combine the tomato paste, red wine vinegar oil, sugar and salt in a microwave-proof dish large enough to hold the shallots in one layer.
  • Add the water, sultanas and bay leave and then the shallots.
  • Cover and microwave on high for 6 minutes or until the onions are tender.
  • Serve immediately or leave to stand and serve at room temperature.
