Sweet and Sour Shallots (baby onions)

- Microwave-proof dish.
Ingredients
- 500 grams Shallots
- 30 ml Tomato Paste
- 30 ml Vinegar - Red Wine
- 15 ml Cold Pressed Olive Oil Extra Virgin
- 15 grams Sugar - Raw
- 5 grams Salt
- 250 ml Water
- 70 grams Sultanas
- 1 Bay leaf
Instructions
- Pour boiling water over the shallots and leave to stand for 1 minute.
- Drain and cut off the root and top section of the shallots, then lift off the skins
- Combine the tomato paste, red wine vinegar oil, sugar and salt in a microwave-proof dish large enough to hold the shallots in one layer.
- Add the water, sultanas and bay leave and then the shallots.
- Cover and microwave on high for 6 minutes or until the onions are tender.
- Serve immediately or leave to stand and serve at room temperature.
