Rice with Kale and Butternut Pumpkin

Ingredients
- 100 grams Rice - Basmati
- 15 grams Curry Powder
- 500 grams Kale remove stems
- 250 grams Butternut Pumpkin peeled and deseeded, cut into 2.5cm pieces
- 40 grams Raisins
- 250 ml Coconut Milk
- 185 ml Water
- Salt to taste
Instructions
- Heat a large frypan over medium heat.
- Add rice, toast, stirring frequently, until lightly browned, about 3 minutes.
- Add curry powder and cook for another 1 minute.
- Add kale, pumpkin, raisins, coconut milk, water and salt.
- Cover and simmer until the liquid is absorbed and the rice and pumpkin are tender, about 12 minutes.
- Remove from the heat and leave to stand, covered for about 5 minutes.
- serve while warm.
