Rice with Kale and Butternut Pumpkin

  • Large frypan

Ingredients

  • 100 grams Rice - Basmati
  • 15 grams Curry Powder
  • 500 grams Kale remove stems
  • 250 grams Butternut Pumpkin peeled and deseeded, cut into 2.5cm pieces
  • 40 grams Raisins
  • 250 ml Coconut Milk
  • 185 ml Water
  • Salt to taste

Instructions

  • Heat a large frypan over medium heat.
  • Add rice, toast, stirring frequently, until lightly browned, about 3 minutes.
  • Add curry powder and cook for another 1 minute.
  • Add kale, pumpkin, raisins, coconut milk, water and salt.
  • Cover and simmer until the liquid is absorbed and the rice and pumpkin are tender, about 12 minutes.
  • Remove from the heat and leave to stand, covered for about 5 minutes.
  • serve while warm.
