Brussels Sprouts with Baked Onion and Tomato

- 20 Brussels Sprouts trimmed and halved
- 6 small Tomatoes - vine halved
- 3 small Onions - Red sliced
- 60 ml Cold Pressed Olive Oil Extra Virgin
- 15 grams Mixed Spice
- Salt and Pepper to taste
Preheat the oven to 200 ℃ and line the baking tray with baking paper.
Place the brussels sprouts, tomatoes and onion into a large mixing bowl. Add enough olive oil to coat them, together with the mixed spice and season with salt and pepper to taste, toss everything together well.
Place the coated brussels sprouts, tomatoes and onion on the baking tray.
Bake for 45 minutes or until cooked through and crisy.
Drizzle with your favourite dressing.
