Brussels Sprouts with Baked Onion and Tomato

Ingredients

  • 20 Brussels Sprouts trimmed and halved
  • 6 small Tomatoes - vine halved
  • 3 small Onions - Red sliced
  • 60 ml Cold Pressed Olive Oil Extra Virgin
  • 15 grams Mixed Spice
  • Salt and Pepper to taste

Instructions

  • Preheat the oven to 200 ℃ and line the baking tray with baking paper.
  • Place the brussels sprouts, tomatoes and onion into a large mixing bowl. Add enough olive oil to coat them, together with the mixed spice and season with salt and pepper to taste, toss everything together well.
  • Place the coated brussels sprouts, tomatoes and onion on the baking tray.
  • Bake for 45 minutes or until cooked through and crisy.
  • Drizzle with your favourite dressing.
