Coleslaw

From the Dutch koolsha, coleslaw is a salad of shedded cabbage,

  • Large Serving Bowl

Ingredients

  • 500 grams Cabbage - green finely shredded
  • 1 large Carrot peeled and grated
  • 1 small Onions - Brown finely chopped
  • 3 only Spring Onions thinly sliced
  • 45 grams Fresh Parsley - Flat-leaf chopped
  • 125 grams Mayonnaise See under Dressing for quick homemade mayo
  • 10 ml Lemon juice
  • 5 grams Dijon Mustard
  • Salt and Pepper to taste

Instructions

  • Finely shred the cabbage using a sharp knife or a mandoline slicer.
  • Place cabbage in a large serving bowl with carrot, onion, spring onions, celery and parsley, toss to combine.
  • Whisk mayonnaise, lemon juice and mustard in a small bowl until combined. Add salt and pepper to taste.
  • Add dressing to salad and gently toss to combine.
