Coleslaw
From the Dutch koolsha, coleslaw is a salad of shedded cabbage,

Servings: 4 people
- 500 grams Cabbage - green finely shredded
- 1 large Carrot peeled and grated
- 1 small Onions - Brown finely chopped
- 3 only Spring Onions thinly sliced
- 45 grams Fresh Parsley - Flat-leaf chopped
- 125 grams Mayonnaise See under Dressing for quick homemade mayo
- 10 ml Lemon juice
- 5 grams Dijon Mustard
- Salt and Pepper to taste
Finely shred the cabbage using a sharp knife or a mandoline slicer.
Place cabbage in a large serving bowl with carrot, onion, spring onions, celery and parsley, toss to combine.
Whisk mayonnaise, lemon juice and mustard in a small bowl until combined. Add salt and pepper to taste.
Add dressing to salad and gently toss to combine.
