Kumara and Lentil Soup

Very quick and easy on a cold winters night,

  • Large Saucepan

Ingredients

  • 5 ml Cold Pressed Olive Oil extra virgin
  • 1 medium Onion - Red chopped
  • 1 large Kumara - Golden or Orange peeled, chopped into small pieces
  • 250 ml Lentils - Red
  • 250 ml Vegetable Stock
  • 750 ml Water
  • 5 ml Ginger powder ground
  • 5 ml Turmeric ground
  • 5 ml Coriander (Cilantro) ground

Instructions

  • Add onion to oil in saucepan - medium-high heat, stir until onion is soft. Add the three spices.
  • Add water and vegetable stock and Kumara pieces
  • Add the red lentils and bring to the boil.
  • Cover and reduce heat and simmer for about 20 minutes (until the Kumara is soft)
  • You can serve if you like it a bit lumpy - but if you like it smooth - use a handheld blender.
