Kumara and Lentil Soup

- Large Saucepan
Ingredients
- 5 ml Cold Pressed Olive Oil extra virgin
- 1 medium Onion - Red chopped
- 1 large Kumara - Golden or Orange peeled, chopped into small pieces
- 250 ml Lentils - Red
- 250 ml Vegetable Stock
- 750 ml Water
- 5 ml Ginger powder ground
- 5 ml Turmeric ground
- 5 ml Coriander (Cilantro) ground
Instructions
- Add onion to oil in saucepan - medium-high heat, stir until onion is soft. Add the three spices.
- Add water and vegetable stock and Kumara pieces
- Add the red lentils and bring to the boil.
- Cover and reduce heat and simmer for about 20 minutes (until the Kumara is soft)
- You can serve if you like it a bit lumpy - but if you like it smooth - use a handheld blender.
