Cashew Basil Presto

Ingredients

  • 50 grams Cashew nuts
  • 20 grams Cheese - Parmesan grated
  • 2 cloves Garlic peeled
  • 50 grams Basil fresh leaves
  • 125 ml Cold Pressed Olive Oil
  • 0.5 Lemon zest
  • 2 grams Salt

Instructions

  • Place all the ingredients in a blender and blend to a smooth pesto. Season to taste.
  • Store in fridge for 7 - 10 days
  • You can freeze small serve size portions, well wrapped in the freezer. Defrost when needed.
