Cashew Basil Presto

- 50 grams Cashew nuts
- 20 grams Cheese - Parmesan grated
- 2 cloves Garlic peeled
- 50 grams Basil fresh leaves
- 125 ml Cold Pressed Olive Oil
- 0.5 Lemon zest
- 2 grams Salt
Place all the ingredients in a blender and blend to a smooth pesto. Season to taste.
Store in fridge for 7 - 10 days
You can freeze small serve size portions, well wrapped in the freezer. Defrost when needed.
