Banana Bread

- 1 Loaf tin
- 1 Food processor
Ingredients
Banana Bread
- 200 grams Almond meal
- 40 grams Psyllium Husk
- 10 grams Baking Powder
- 2 grams Salt
- 3 Eggs
- 125 ml Cream
- 1 Banana - ripe
- 30 grams Pumpkin Seeds
- 30 grams Sunflower Seeds
- 5 grams Ground Cinnamon
- 5 ml Vanilla Extract
Top of loaf
- 15 grams Seeds or nuts
Instructions
- Pre-heat oven to 180 C. Line a loaf tin with baking paper.
- Place all the banana bread ingredients in a food processor and blend until smooth.
- Pour into the loaf tin, scatter over the seeds or nuts, and bake for 39 minutes.
- Insert aa skewer into the centre of the loaf and make sure it comes out clean.
- If the bread seems a little under-cooled, bake for another 5 minutes before testing again.
