This a a super easy way to use any banana that may be getting passed their best.

  • 1 Loaf tin
  • 1 Food processor

Ingredients

Banana Bread

  • 200 grams Almond meal
  • 40 grams Psyllium Husk
  • 10 grams Baking Powder
  • 2 grams Salt
  • 3 Eggs
  • 125 ml Cream
  • 1 Banana - ripe
  • 30 grams Pumpkin Seeds
  • 30 grams Sunflower Seeds
  • 5 grams Ground Cinnamon
  • 5 ml Vanilla Extract

Top of loaf

  • 15 grams Seeds or nuts

Instructions

  • Pre-heat oven to 180 C. Line a loaf tin with baking paper.
  • Place all the banana bread ingredients in a food processor and blend until smooth.
  • Pour into the loaf tin, scatter over the seeds or nuts, and bake for 39 minutes.
  • Insert aa skewer into the centre of the loaf and make sure it comes out clean.
  • If the bread seems a little under-cooled, bake for another 5 minutes before testing again.
