Yams with Lime

Very simple - the tang of the lime goes well with the natural sweetness of the yams.

Equipment

  • Microwave-proof dish.

Ingredients

  • 400 grams Yams halved lengthwise
  • 15 grams Sugar - Raw
  • 15 ml Cold Pressed Olive Oil Extra Virgin
  • 1 Lime rind (5 g) and juice (30 ml)
  • Freshly ground Black Peeper to taste
  • 15 grams Fresh Mint or Parsley finely chopped

Instructions

  • Place the yams, sugar, oil, rind, juice and pepper into a microwave-proof dish.
  • Mix, cover and cook on high for 4 - 6 minutes or until tender.
  • Stir once during cooking.
  • Mix the herbs through the yams.
  • Enjoy.
