Yams with Lime
Very simple - the tang of the lime goes well with the natural sweetness of the yams.

- 400 grams Yams halved lengthwise
- 15 grams Sugar - Raw
- 15 ml Cold Pressed Olive Oil Extra Virgin
- 1 Lime rind (5 g) and juice (30 ml)
- Freshly ground Black Peeper to taste
- 15 grams Fresh Mint or Parsley finely chopped
Place the yams, sugar, oil, rind, juice and pepper into a microwave-proof dish.
Mix, cover and cook on high for 4 - 6 minutes or until tender.
Stir once during cooking.
Mix the herbs through the yams.
