Banana and Kumara Salad
This salad combines favourite ingredients to give a real taste explosion.

Main ingredients
- 450 grams Kumara Cut in half
- 1 large Bananas
- 30 grams Cashew Nuts roughly chopped
- 1 Spring Onions finely sliced
Dressing
- 15 ml Lemon Juice
- 15 ml Cold Pressed Olive Oil Extra Virgin
- 10 grams Raw Sugar
- Salt and Pepper to taste
Scrub the kumara but do not peel. Cut in half and boil for 20 - 25 minutes or until softened but still firm.
Drain and cut into bite-sized chunks.
Peel and slice the banana.
Place the kumara, banana, cashew nuts and spring onions in a serving bowl.
Blend the lemon juice, oil raw sugar and pepper together.
Pour the dressing over the salad and mix well.
Serve either warm or chilled.
