Thai-style Kumara Salad

Main Ingredients
- 750 grams Kumara peeled and cubed
- 1 medium Capsicums - Red diced
- 2 sticks Celery sliced
- 1 handful Fresh Parsley - Flat-leaf sliced
- 1 handful Chives sliced
- 1 handful Basil sliced
Dressing
- 125 ml Coconut Milk
- 1 Lime zested and juiced
- 1 Red Chilli deseeded, & finely diced
- Salt and Pepper to taste
Place kumara in a saucepan and cook until semi-soft but still firm.
Drain and allow to cool.
Place kumara in bowl, add capsicum,celery, and herbs. mix well
Put all the dressing ingredients into a jam jar and shake well.
Drizzle over the kumara and mix well.
