Thai-style Kumara Salad

Ingredients

Main Ingredients

  • 750 grams Kumara peeled and cubed
  • 1 medium Capsicums - Red diced
  • 2 sticks Celery sliced
  • 1 handful Fresh Parsley - Flat-leaf sliced
  • 1 handful Chives sliced
  • 1 handful Basil sliced

Dressing

  • 125 ml Coconut Milk
  • 1 Lime zested and juiced
  • 1 Red Chilli deseeded, & finely diced
  • Salt and Pepper to taste

Instructions

  • Place kumara in a saucepan and cook until semi-soft but still firm.
  • Drain and allow to cool.
  • Place kumara in bowl, add capsicum,celery, and herbs. mix well
  • Put all the dressing ingredients into a jam jar and shake well.
  • Drizzle over the kumara and mix well.
