Crunchy Salad with Apples
The Radish and Apple give this salad a satisfying crunch.

- 30 grams Sunflower seeds
- 1 small Lettuce - Cos tear into strips
- 300 grams Apple - Red cut into small pieces
- 15 ml Lemon juice
- 100 grams Radish peel and grate
- Alfalfa Sprouts for garnish

Dry roast sunflower seeds in a frypan over medium heat until light brown.Stir constantly to ensure seeds do not burn.Transfer to a dish to cool. Reserse a few whole lettuce leaves and tear the rest into strips.
Cut apples into small pieces and place in a bowl with lemon juice to help prevent discolouration.
Peel radish and finely grate.
Place the cut lettuce and apple in bowl and add dressing. Mix gently.
Place the whole lettuce leaves on to serving plate.
Add salad mixtue to each and sprinkle with the sunflower seeds, radish and sprouts.
