KALE WITH ORANGE AND AVOCADO

 

Kale Salad with Avocado and Orange

Equipment

  • Large Serving Bowl

Ingredients

Salad

  • 30 ml Pumpkin Seeds
  • 10 leaves Kale - Cavolo Nero cut the stalk out and discard
  • 1 large Oranges
  • 1 large Carrot
  • 1 large Avocados
  • 20 ml Cold pressed Olive oil extra virgin

Dressing

  • Orange - zest
  • 30 ml Lemon juice
  • 30 ml Raisins or Currants
  • 5 ml Honey - Runny
  • 30 ml Cold Pressed Olive Oil extra virgin
  • Salt to taste

Instructions

Salad

  • Chop up the kale leaves (after discarding the stalks) and put into the bowl.
  • Add the Olive oil and with your hands massage it into the kale. (Very good for your hands too). If you have some very ripe avocado - rub this into the kale as well.
  • Slice the orange into wedges and remove and discard the skin.
  • Peel the carrot and continue to cut the carrot into strips with the peeler.
  • Mix the orange and carrot with the kale.
  • Add the sliced avocado and pumpkin seeds to the salad

Dressing

  • Grate the orange zest into a small mixing bowl, add the lemon juice and currants/raisins. they will start to soak up lemon juice.
  • Add the honey and olive oil to the rest of the dressing and whisk briskly before drizzling over the salad.
