Radish and Cumcumber Salad

The process of salting cucumbers removes some of the liquid, so that the flavour of the dressing is not heavily diluted. Also, it helps remove any bitter taste that the cucumbers may have.

Equipment

  • Colander, serving bowl, mixing jar

Ingredients

  • 1 medium Cucumber Peel away strips of the skin lengthways to create a striped effect.
  • 2 grams Sea Salt
  • 1 medium Radish - Daikon Cut into very thin curls.
  • 10 medium Radish - Red Thinly sliced
  • 40 grams Fresh Parsley - Flat-leaf Chopped
  • 30 grams Fresh Clives Chopped
  • Mung beans sprouts for garnish
  • Vinaigrette see under dressing for our quick vinaigrette.

Instructions

  • Slice the cucumber thinly, place in colander and sprinkle with salt. Drain and pat dry.
  • Place the cucumber in a serving bowl, Add the red and white radish on top.
  • Drizzle the vinaigrette over - add chives, parsley and mung bean sprouts.
