Red and Green Salad
Try contrasting colours in your lettuce choices.

- 1 head Lettuce - Butterhead
- 1 head Lettuce - Red like Lollo Rossa
- 4 Eggs - hard boiled
- 4 large Radish - Red thinly sliced
- 15 ml Mayonnaise see under dressings for recipe
- Fresh Parsley - Flat-leaf to garnish
- Vinaigrette see under dressings for recipe
Tear or chop the lettuces into small pieces. Arrange in your serving dish.
Add the radishes and drizzle the vinaigrette over. Toss to combine.
Peel eggs and cut in half. Place a little mayonnaise on each egg half.
Place the egg halves on the lettuce and serve with the parsley garnish.
