Red and Green Salad

Try contrasting colours in your lettuce choices.

Ingredients

  • 1 head Lettuce - Butterhead
  • 1 head Lettuce - Red like Lollo Rossa
  • 4 Eggs - hard boiled
  • 4 large Radish - Red thinly sliced
  • 15 ml Mayonnaise see under dressings for recipe
  • Fresh Parsley - Flat-leaf to garnish
  • Vinaigrette see under dressings for recipe

Instructions

  • Tear or chop the lettuces into small pieces. Arrange in your serving dish.
  • Add the radishes and drizzle the vinaigrette over. Toss to combine.
  • Peel eggs and cut in half. Place a little mayonnaise on each egg half.
  • Place the egg halves on the lettuce and serve with the parsley garnish.
