Feta and Mint Potato Salad
Feta cheese,Yogurt, and fresh mint combine perfectly with warm potatoes in this salad.

- 500 grams Potatoes - Red Skinned
- 90 grams Cheese - Feta crumbled
Dressing
- 225 grams Greek-style natural Yoghurt
- 15 grams Fresh Mint
- 30 ml Mayonnaise see under dressing for recipe
- Salt and Pepper to taste
Steam the potatoes in your steamer for about 20 minutes, until tender. (steaming adds no calories to the potatoes but does preserve the Vitamin C.)
Add potatoes to your serving bowl whole.
Put the yoghurt and mint leaves in the food processor for a few minutes until the mint leaves are finely chopped.
Transfer the dressing into a small bowl and stir in the mayonnaise and season to taste.
Spoon the dressing over the warm potatoes and scatter with the feta cheese.
