Creamy Broccoli and Cauliflower
Carrot juice is an anti-oxidant-rich ingredient that makes the sauce for this dish every bit as healthy as the vegetables.

- 125 ml Carrot Juice
- 45 grams Sour Cream - light
- 150 grams Broccoli florets
- 210 grams Cauliflower florets
Bring the carrot juice to the boil in a small saucepan, over high hea Leave on the boil until reduced by about half, about 8 minutes. Remove from the heat. Whisk in the sour cream.
Steam the brocoli and cauliflower until crisp tender, about 5 minutes.
Transfer to a serving dish. Serve with the sour cream sauce.
You can drizzle it over the vegetables or serve the sauce in a separte bowl to enable you to dip.
