Mixed Salad Greens with Avocado

Although Avocado is high in fat, it is mostly monounsaturated. This type of fat helps to lower blood levels of LDL - the bad cholesterol.

Ingredients

Main Ingredients

  • 350 grams Mixed Salad Greens Ensure to use all colour lettuces
  • 1 Medium Onion - Red Thinly sliced
  • 1 Large Avocados Peeled and sliced

Dressing

  • 15 ml Cold Pressed Olive oil Extra Virgin
  • 15 ml Lemon Juice
  • 5 ml Dijon Mustard
  • Salt to taste

Instructions

  • Whisk oil, lemon juice, mustard and salt in a serving bowl until combined.
  • Add the salad greens and red onion.
  • Toss well to coat leaves with dressing.
  • Add Avocado and toss to combine.
  • Enjoy
