Warm Red Cabbage and Cherry Tomato Salad

- Large Saucepan
Ingredients
- 450 grams Cabbage - Red Finely shredded
- 1 medium Onions - Brown Thinly sliced
- 30 ml Cold-pressed Olive Oil Extra Virgin
- 30 ml Vinegar - Red Wine
- 225 grams Tomatoes - Cherry Halved
- 60 grams Chives Snipped into 30 cm lenghts
- Salt and Pepper to taste
Instructions
- Heat the oil in a large saucepan and put in the onion and cabbage.
- Cook and cover gently for about 10 minutes, or until the cabbage is tender, stirring from time to time.
- Once tender, add the vinegar.
- This stage can be done in advance.
- When ready to serve, gently reheat the cabbage (if prepare before hand)
- Stir in the Cherry Tomatoes and chives.
- Check the seasoning and serve.
