MARINATED VEGETABLE SALAD

Marinated Vegetable Salad

Make this salad a few hours before you need it to allow the flavours to mingle.
These slightly crisp vegetables marinated in a subtle ginger dressing taste.

Ingredients

  • 1 only Capsicums - Green cut into chunks
  • 1 large Carrot cut into thin sticks
  • 6 only Brussels Sprouts halved
  • 250 grams Cauliflower florets
  • 250 grams Broccoli florets
  • 3 medium Spring Onions cut into 4cm lenghts
  • 120 ml Vinegar - White Wine
  • 100 grams Sugar - Raw
  • 125 ml Water boiling
  • 15 grams Ginger crushed

Instructions

  • Blanch the vegetables in boiling water for 3 minutes.
  • Cool under cold running water.
  • Mix vinegar, sugar, water, ginger until sugar dissolves.
  • cool and pour over the vegetables.
  • Allow to marinate for 3 - 4 hours.
