Swede with lemon
Swede is wonderfully enhanced by lemon and this succulent lemon glaze is a great way to discover what a fantastic vegetable Swede is.

- 400 grams Swedes peeled, & cut into bite sized chunks.
- 15 grams Sugar - Raw
- 15 grams Butter
- 1 medium Lemon grated rind (5g ) & Juice (30 ml)
- Black Pepper freshly ground
- 2 Spring Onions Thinly sliced diagonally
Place the swedes, raw sugar, butter, lemon rind, lemon juice and pepper in a microwave-proof dish.
Mix, cover and cook on high for 4 - 6 minutes or until the swede is tender.
Stir once during cooking.
Garnish with the spring onions.
