Swede with lemon

Swede is wonderfully enhanced by lemon and this succulent lemon glaze is a great way to discover what a fantastic vegetable Swede is.

Equipment

  • Microwave-proof dish.

Ingredients

  • 400 grams Swedes peeled, & cut into bite sized chunks.
  • 15 grams Sugar - Raw
  • 15 grams Butter
  • 1 medium Lemon grated rind (5g ) & Juice (30 ml)
  • Black Pepper freshly ground
  • 2 Spring Onions Thinly sliced diagonally

Instructions

  • Place the swedes, raw sugar, butter, lemon rind, lemon juice and pepper in a microwave-proof dish.
  • Mix, cover and cook on high for 4 - 6 minutes or until the swede is tender.
  • Stir once during cooking.
  • Garnish with the spring onions.
  • Enjoy.
