Peppers and Baby onions
No matter what time of the year, or if you are serving this with hot or cold foods, this salad works so well and tastes great.

Servings: 4 people
- 2 Peppers - Yellow cut into wedges
- 6 Onions - Baby peeled and halved
- Olive oil for spraying
- 10 Tomatoes - Cherry halved
- 1 Avocados sliced
- 5 handfuls Mesclun
- 45 ml Vinaigrette - Herb see under dressings
Place the peppers and onions on to the baking tray.
Spray with oil.
Bake at 200 degrees C for 20 - 25 minutes.
Allow to cool slightly on a serving dish and add rest of the ingredients.
Toss the vinaigrette through the salad.
Enjoy.
