Broad Beans with Feta Cheese
Feta cheese is great with broad beans.

- 400 grams Beans - Broad You can use frozen ones.
- 30 ml Lemon Juice
- 90 ml Cold Pressed Olive Oil Extra Virgin
- 150 grams Cheese - Feta
- 1 bunch Fresh herbs (oregano, marjoram, mint or thyme)
- Salt and Pepper to taste
Bring a large saucepan of salted water to the boil and blanch the broad beans for about 3 - 5 minutes. Drain and refresh under cold water.
Leave to drain and then place on paper towel to dry completely.
Make the dressing by crushing the herbs with a good pinch of salt in a pestle and mortar (or food processor)
Once the herbs are pureed, add lemon juice, olive oil, feta cheese and pepper.
Pour the dressing on the beans and mix well.
