Broad Beans with Feta Cheese

Feta cheese is great with broad beans.

Ingredients

  • 400 grams Beans - Broad You can use frozen ones.
  • 30 ml Lemon Juice
  • 90 ml Cold Pressed Olive Oil Extra Virgin
  • 150 grams Cheese - Feta
  • 1 bunch Fresh herbs (oregano, marjoram, mint or thyme)
  • Salt and Pepper to taste

Instructions

  • Bring a large saucepan of salted water to the boil and blanch the broad beans for about 3 - 5 minutes. Drain and refresh under cold water.
  • Leave to drain and then place on paper towel to dry completely.
  • Make the dressing by crushing the herbs with a good pinch of salt in a pestle and mortar (or food processor)
  • Once the herbs are pureed, add lemon juice, olive oil, feta cheese and pepper.
  • Pour the dressing on the beans and mix well.
