Mango Quinoa Salad

Great Salad - just add your favourite protein for a main dish.
If you cannot get fresh mango - use canned mango.

Ingredients

Main Ingredients

  • 180 grams Quinoa (White or Red)
  • 375 ml Water
  • 1 large Cucumber Telegraph - diced
  • 4 Spring Onions sliced
  • 2 long Red Chillies deseeded and sliced
  • Lime rind
  • 125 grams Fresh Coriander leaves chopped
  • 1 large Mango peeled and diced

Dressing

  • 1 clove Garlic finely grated
  • 5 grams Raw Sugar
  • 15 ml Fish Sauce
  • 15 ml Lime Juice
  • 15 ml Cold Pressed Olive Oil Extra Virgin

Instructions

  • Place quinoa in a small saucepan with the water and lime rind, bring to the boil, then reduce the heat, cover and simmer for 10 minutes until all the water is absorted.
  • Remove from the heat and cool completely, remove and discard the lime rind.
  • Combine the quinoa in a bowl with the cucumber, spring onions, chillies and coriander leaves.
  • Mix all the dressing ingredients together.
  • Pour over the salad, toss well and just before serving, add mango and garnish with extra coriander leaves.
