Mango Quinoa Salad

Main Ingredients
- 180 grams Quinoa (White or Red)
- 375 ml Water
- 1 large Cucumber Telegraph - diced
- 4 Spring Onions sliced
- 2 long Red Chillies deseeded and sliced
- Lime rind
- 125 grams Fresh Coriander leaves chopped
- 1 large Mango peeled and diced
Dressing
- 1 clove Garlic finely grated
- 5 grams Raw Sugar
- 15 ml Fish Sauce
- 15 ml Lime Juice
- 15 ml Cold Pressed Olive Oil Extra Virgin
Instructions
- Place quinoa in a small saucepan with the water and lime rind, bring to the boil, then reduce the heat, cover and simmer for 10 minutes until all the water is absorted.
- Remove from the heat and cool completely, remove and discard the lime rind.
- Combine the quinoa in a bowl with the cucumber, spring onions, chillies and coriander leaves.
- Mix all the dressing ingredients together.
- Pour over the salad, toss well and just before serving, add mango and garnish with extra coriander leaves.
