Spinach Grapefruit Salad

- 150 grams Spinach Leaves Torn into pieces
- 1 large Grapefruit peeled and segmented
- 1 small Onion - Red Diced
- 0.5 small Cabbage - Red shredded
- 45 ml Cold Pressed Olive Oil
- 30 ml Vinegar - Red Wine
- 45 ml Orange Juice
- Salt and Pepper to taste
- Orange - zest cut into strips.
In the salad bowl, place spinach, grapefruit, onion, and cabbage and toss well.
In a mixing jar, mix together the oil, vinegar, orange juice, and salt & pepper.
Pour over the salad and lightly toss.
Serve with the orange rind as ganishing.
