Equipment

  • 1 Food processor
  • 1 large Wok or frypan

Ingredients

  • 1 medium Zucchini finely grated
  • 1 medium Cauliflower broken into small florets
  • 1 small Onions - Brown finely chopped
  • 1 small Carrots finely grated
  • 20 grams Mixed herbs
  • 15 grams Fresh Parsley - Flat-leaf finely chopped
  • 40 ml Coconut oil
  • Salt and Pepper to taste

Instructions

  • Place the grated zucchini in a clean tea towel and squeeze to remove excess liquid. Set aside.
  • Place the cauliflower florets in a food processor and pulse until the cauliflower resembles grains of rice.
  • Heat the oil in a large wok over medium heat.
    Add the onion and fry for 2 minutes.
    Add the carrot, zucchini and herbs and fry for 2 more minutes.
  • Add the cauliflower rice and parsley and stir for 3 minutes until the cauliflower is cooked through.
  • Season to taste and serve warm.
