Herbed Cauliflower rice
Equipment
- 1 Food processor
- 1 large Wok or frypan
Ingredients
- 1 medium Zucchini finely grated
- 1 medium Cauliflower broken into small florets
- 1 small Onions - Brown finely chopped
- 1 small Carrots finely grated
- 20 grams Mixed herbs
- 15 grams Fresh Parsley - Flat-leaf finely chopped
- 40 ml Coconut oil
- Salt and Pepper to taste
Instructions
- Place the grated zucchini in a clean tea towel and squeeze to remove excess liquid. Set aside.
- Place the cauliflower florets in a food processor and pulse until the cauliflower resembles grains of rice.
- Heat the oil in a large wok over medium heat.Add the onion and fry for 2 minutes.Add the carrot, zucchini and herbs and fry for 2 more minutes.
- Add the cauliflower rice and parsley and stir for 3 minutes until the cauliflower is cooked through.
- Season to taste and serve warm.
