- 5 large Zucchini cut into spaghetti strands
- 6 Tomatoes - yellow cheery halved
- 3 large Spring Onions roughly chopped
- 45 grams Fresh Parsley roughly chopped
- 1 small Capsicums - Red sliced
- 15 grams Sesame Seeds
- 30 ml Cold Pressed Olive Oil
- Salt and Pepper to taste
Bring a large pot to the boil and cook the zucchini noodles for 2 minutes, then drain and rinse in cold water and place in a large bowl.
Drizzle the oil over the top, add the tomatoes, spring onions, parsley and capsicum. Season to taste and toss to combine well.
Serve garnished with sesame seeds.
