Zucchini Salad

  • 1 Large Pot
  • 1 Serving Bowl

Ingredients

  • 5 large Zucchini cut into spaghetti strands
  • 6 Tomatoes - yellow cheery halved
  • 3 large Spring Onions roughly chopped
  • 45 grams Fresh Parsley roughly chopped
  • 1 small Capsicums - Red sliced
  • 15 grams Sesame Seeds
  • 30 ml Cold Pressed Olive Oil
  • Salt and Pepper to taste

Instructions

  • Bring a large pot to the boil and cook the zucchini noodles for 2 minutes, then drain and rinse in cold water and place in a large bowl.
  • Drizzle the oil over the top, add the tomatoes, spring onions, parsley and capsicum. Season to taste and toss to combine well.
  • Serve garnished with sesame seeds.
