Three Bean Salad Tuscan-style

This classic Tuscan salad uses cannellini beans, red kidney beans and fresh green beans.

Ingredients

  • 300 grams Beans - Green trimmed and halved
  • 1 400g can Beans - Red Kidney rinsed and drained
  • 1 400g can Beans - Cannellini rinsed and drained
  • 1 small Onion - Red finely chopped
  • 2 large Tomatoes seeded and chopped
  • 45 grams Fresh Parsley - Flat-leaf chopped
  • 45 ml Cold Pressed Olive Oil Extra Virgin
  • 30 ml Lemon Juice
  • 1 clove Garlic crushed
  • Salt and Pepper to taste

Instructions

  • Half fill a medium saucepan with water and bring to a boil.
  • Add green beans - cook 5 to 7 minutes or until just tender. Drain and cool.
  • Combine green beans, kidney beans, cannellini beans, onion, tomatoes and parsley in a serving bowl.
  • Mix oil, lemon juice and garlic. Add salt and pepper to taste.
  • Stir into the salad.
  • Enjoy.
