Three Bean Salad Tuscan-style
This classic Tuscan salad uses cannellini beans, red kidney beans and fresh green beans.

- 300 grams Beans - Green trimmed and halved
- 1 400g can Beans - Red Kidney rinsed and drained
- 1 400g can Beans - Cannellini rinsed and drained
- 1 small Onion - Red finely chopped
- 2 large Tomatoes seeded and chopped
- 45 grams Fresh Parsley - Flat-leaf chopped
- 45 ml Cold Pressed Olive Oil Extra Virgin
- 30 ml Lemon Juice
- 1 clove Garlic crushed
- Salt and Pepper to taste
Half fill a medium saucepan with water and bring to a boil.
Add green beans - cook 5 to 7 minutes or until just tender. Drain and cool.
Combine green beans, kidney beans, cannellini beans, onion, tomatoes and parsley in a serving bowl.
Mix oil, lemon juice and garlic. Add salt and pepper to taste.
Stir into the salad.
