Raw Shoots and Seeds Super Salad

Bursting with healthy sprouted and dried seeds, walnuts and fruit.

Equipment

  • Serving Bowl, small mixing bowl.

Ingredients

  • 225 grams Mixed sprouted seeds and beans
  • 25 grams Pumpkin Seeds
  • 25 grams Sunflower Seeds
  • 25 grams Sesame Seeds
  • 1 large Apple - Granny Smith cored and roughly chopped
  • 70 grams Dried Apricots roughly chopped
  • 1 Lemon zested and juiced
  • 50 grams Walnuts roughly chopped
  • 30 ml Walnut Oil

Instructions

  • Put the sprouted seeds (Alfalfa, mung beans, soybeans, aduki beans, chickpeas and radish seeds, pumpkin seeds, sunflower seeds, and sesame seeds in a large bowl.)
  • Stir in the apple, dried apricots, lemon zest and walnuts.
  • Mix lemon juice and oil in a small bowl.
  • Stir the dressing into the salad and serve immediately.
