Broccoli Mash

Equipment

  • 1 Large Pot
  • 1 Stick blender

Ingredients

  • 1 large Broccoli cut into small florets
  • 30 mls Sour Cream
  • 3 grams Ground Coriander
  • 60 mls Cold Pressed Olive Oil
  • Salt and Pepper to taste
  • Fresh Coriander leaves to garnish

Instructions

  • Bring a large pot of water to a rolling boil.
  • Add the broccoli and boil for 7 minutes or until tender.
  • Drain and return to the pot, reserving one or two florets for garnish.
  • Add the sour cream and coriander seeds.
  • Puree with a stick blender until smooth, drizzling in the oil to achieve your desired consistency.
  • Let sit for 5 minutes, then blend again for 1 minute.
  • Reheat gently if needed, season to taste, garnish with reserved florets and coriander leaves and serve warm.
