Broccoli Mash
Equipment
- 1 Large Pot
- 1 Stick blender
Ingredients
- 1 large Broccoli cut into small florets
- 30 mls Sour Cream
- 3 grams Ground Coriander
- 60 mls Cold Pressed Olive Oil
- Salt and Pepper to taste
- Fresh Coriander leaves to garnish
Instructions
- Bring a large pot of water to a rolling boil.
- Add the broccoli and boil for 7 minutes or until tender.
- Drain and return to the pot, reserving one or two florets for garnish.
- Add the sour cream and coriander seeds.
- Puree with a stick blender until smooth, drizzling in the oil to achieve your desired consistency.
- Let sit for 5 minutes, then blend again for 1 minute.
- Reheat gently if needed, season to taste, garnish with reserved florets and coriander leaves and serve warm.
