Lamb Koftas and Lemony Hummus

Tranitional hummus is made with chickpeas. Enjoy this homemade hummus.

Equipment

  • 1 Mixing Bowl
  • 1 Blender
  • 1 Large frying pan

Ingredients

Koftas

  • 500 grams Lamb mince
  • 1 med Onions - Brown diced
  • 15 ml Cold Pressed Olive Oil
  • 1 Zucchini grated
  • 1 clove Garlic crushed
  • 5 grams Ground Cumin
  • 1 handful Fresh Parsley chopped
  • 1 Salt and Pepper to taste

Hummus

  • 2 - 3 cloves Garlic
  • 1 Lemon zest and juice
  • 125 ml Cold Pressed Olive Oil
  • 125 ml Water
  • 125 grams Sunflower Seeds
  • 125 grams Sesame Seeds
  • 1 can Chickpeas drained
  • 3 grams Ground Cumin
  • 1 Salt and Pepper to taste

Instructions

  • Add all the Kofta ingredients to a mixing bowl. Mix with your hands until well combined, then shape into finger-length sausages.
  • Place all the hummus ingredients in a blender and blend until smooth.
    Season with salt and pepper to taste. Set aside.
  • Heat a little oil in large frying pan over a medium heat and fry the Koftas for 6 - 8 minutes, turning regularly.
  • You could also place them in an oven-proof baking dish and bake them at 200 C for 8 - 10 minutes.
  • To serve, put two tablespoons of hummus onto each plate and top with a few koftas.
