Lamb Koftas and Lemony Hummus
Equipment
- 1 Mixing Bowl
- 1 Blender
- 1 Large frying pan
Ingredients
Koftas
- 500 grams Lamb mince
- 1 med Onions - Brown diced
- 15 ml Cold Pressed Olive Oil
- 1 Zucchini grated
- 1 clove Garlic crushed
- 5 grams Ground Cumin
- 1 handful Fresh Parsley chopped
- 1 Salt and Pepper to taste
Hummus
- 2 - 3 cloves Garlic
- 1 Lemon zest and juice
- 125 ml Cold Pressed Olive Oil
- 125 ml Water
- 125 grams Sunflower Seeds
- 125 grams Sesame Seeds
- 1 can Chickpeas drained
- 3 grams Ground Cumin
- 1 Salt and Pepper to taste
Instructions
- Add all the Kofta ingredients to a mixing bowl. Mix with your hands until well combined, then shape into finger-length sausages.
- Place all the hummus ingredients in a blender and blend until smooth.Season with salt and pepper to taste. Set aside.
- Heat a little oil in large frying pan over a medium heat and fry the Koftas for 6 - 8 minutes, turning regularly.
- You could also place them in an oven-proof baking dish and bake them at 200 C for 8 - 10 minutes.
- To serve, put two tablespoons of hummus onto each plate and top with a few koftas.
