Garlic Sweet Potato Mash
Delicous Mashed garlicky butter, orange fleshed sweet potato, not only looks good, but they're packed with vitamins.

Servings: 4 people
- 4 large Kumara (Sweet potato) cubed
- 40 grams Butter - unsalted
- 3 cloves Garlic crushed
- Salt and Pepper to taste
Cook the Kumara in a large saucepan of boiling salted water for about 15 minutes or until tender. Drain and return to pan.
While the Kumara is cooking, melt the butter in a small frypan, then saute the garlic over a low to medium heat for 1 - 2 minutes until light golden, stirring to prevent garlic burning.
Pour the garlic butter over the Kumara, season to taste and mash thoroughly until smooth and creamy.
Serve with your choice of Protein or other vegetables.
