Greek Feta Salad

A Mediterranean diet, rich in olive oil, sun-kissed vegetables and lemons, has long been recognised as healthy.

Ingredients

Main Ingredients

  • 25 grams Rocket
  • 300 grams Tomatoes thinly sliced
  • 150 grams Cucumber peeled and thinly sliced
  • 1 small Onion - Red thinly sliced
  • 115 grams Cheese - Feta cut into cubes
  • Olives - Black stoned

Dressing

  • 45 ml Cold Pressed Olive Oil Extra Virgin
  • 15 ml Lemon Juice
  • 3 grams Dried Oregano
  • Salt and Pepper to taste

Instructions

  • Arrange the rocket on four plates.
  • Scatter over the tomatoes, cucumber and onion, then the feta and olives.
  • To make the dressing, put the oil, lemon juice and dried oregano in a jam jar, screw on the lid and shake well.
  • Drizzle over the salad, season to taste with salt and pepper, then serve immediately.
  • Enjoy.
